The owner of Manolo Caracol, Mr Manuel MadueƱo is born in Barbate, Andalusia, in the second half of the twentieth century. He works as a bookseller, cook and marketer of art, and unites his three great passions following in the footsteps of one of his heroes, Leonardo Da Vinci.

Manolo is generous of spirit and has a wealth of creativity, which applies in all its actions.
Appointed its first restaurant in Villa de Leiva, Colombia, in honor of the Florentine master: The Three Snails. Conquers Panama with another, eponym, to finally create the current restaurant, Manolo Caracol in the Casco Viejo of the capital City.
